Interview with chef Dan Smith of John Andrews Farmhouse Restaurant:
“We feature around 25 to 30 local farms for local lamb, pork, beef, a lot of produce, cheeses from the area. When I started out there was only, maybe a handful of farms and now there’s, you know, it just keeps growing, there’s tons of local farms around here.”
Interview with Dave Pickerell, Master Distiller at Hillrock Estate Distillery:
“Hillrock is ah, the only field to glass distillery in the United States, and what we mean by that is we grow all of our own grain right here on site. We malt all of our own grain in a traditional floor malting facility and do all of the processing so that from the time the seed comes in it never leaves the distillery until it’s in a full bottle.”
